Ingredients

  • 200g butter – softened
  • ½ cup sugar
  • 1¼ cups flour
  • ¼ cup cocoa powder
  • 1 teaspoon vanilla extract
  • 2 cups cornflakes
  • ½ cup walnuts – chopped
  • ½ cup chocolate chunks (optional)

Chocolate Icing

  • 20g butter – melted
  • ¼ cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1½ cup icing sugar
  • A little boiling water

Method

  • Preheat oven to 180°C (160°C fan bake).
  • Line a 20cm square slice tin with baking paper.
  • Cream the butter and sugar in an electric mixer until light and fluffy.
  • Beat in the flour, cocoa and vanilla.
  • Add the cornflakes and beat until just combined.
  • Press into the prepared tin and bake for 25 minutes.
  • Leave to cool before icing.
  • To make the Chocolate Icing, mix the butter, cocoa and vanilla in a medium bowl.
  • Stir in the icing sugar and just enough boiling water to make an icing consistency.
  • Spread over the slice and sprinkle with the walnuts and chocolate, if using.
  • Leave to set, then cut into 12 pieces.
