Ingredients
- 200g butter – softened
- ½ cup sugar
- 1¼ cups flour
- ¼ cup cocoa powder
- 1 teaspoon vanilla extract
- 2 cups cornflakes
- ½ cup walnuts – chopped
- ½ cup chocolate chunks (optional)
Chocolate Icing
- 20g butter – melted
- ¼ cup cocoa powder
- 1 teaspoon vanilla extract
- 1½ cup icing sugar
- A little boiling water
Method
- Preheat oven to 180°C (160°C fan bake).
- Line a 20cm square slice tin with baking paper.
- Cream the butter and sugar in an electric mixer until light and fluffy.
- Beat in the flour, cocoa and vanilla.
- Add the cornflakes and beat until just combined.
- Press into the prepared tin and bake for 25 minutes.
- Leave to cool before icing.
- To make the Chocolate Icing, mix the butter, cocoa and vanilla in a medium bowl.
- Stir in the icing sugar and just enough boiling water to make an icing consistency.
- Spread over the slice and sprinkle with the walnuts and chocolate, if using.
- Leave to set, then cut into 12 pieces.
