Rolled oats used in baking are not only delicious, but they also add in a healthy component.

- 1 cup rolled oats
- 1 cup flour
- 2/3 cup brown sugar
- 2/3 cup desiccated coconut
- 125g butter - cubed
- 2 tablespoons golden syrup
- 2 tablespoons water
- 1/2 teaspoon baking soda
Icing
- 150g butter - cubed
- 1 1/2 cups icing sugar
- 1/4 cup golden syrup
- 2 tablespoons ginger
Topping
- 1/3 cup toasted thread coconut
- 1/3 cup crystalised ginger - chopped
Method
Method
- Preheat the oven to 180 degrees (160 fan bake). Line a 20cm x 30cm slice pan with baking paper.
- In a medium bowl combine the rolled oats, flour, brown sugar and desiccated coconut together.
- In a small saucepan melt 125g butter, 2 tablespoons golden syrup and water together. Add in the baking soda and stir.
- Pour the butter mixture into the oat mixture and combine. Press into the prepared slice pan and bake for 20-25 minutes until golden.
Icing
- Melt the butter. Whisk in the remaining ingredients and pour over the warm slice.
- Top with the toasted thread coconut and chopped crystallised ginger.
