Ingredients

For the apple, walnut & sultana loaf

  • 1¾ cups peeled and diced apple
  • 1 cup brown sugar
  • 100g butter — melted
  • 1 egg — beaten
  • 1½ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup sultanas
  • ½ cup chopped walnuts

Method

For the apple, walnut & sultana loaf

  • Preheat the oven to 180°C (160°C fan bake). Line a 21 x 10cm loaf tin with baking paper.
  • Combine the apple, sugar, melted butter and egg in a bowl. Mix well.
  • Sift the dry ingredients over the apple mixture and mix well.
  • Stir in the sultanas and walnuts.
  • Transfer to the prepared loaf tin and bake for 40–50 minutes or until a skewer comes out clean.
