Apricot and Mustard Glazed Salmon

Dinner doesn’t get much easier than this – simply brush the salmon with a flavoursome glaze, bake it in a hot oven and serve with potatoes and salad.


  • 4 x 150g skin-on, boneless salmon fillets
  • ¼ cup apricot jam
  • 1 tablespoon wholegrain mustard
  • 1 tablespoon dijon mustard
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 2 teaspoons grated fresh ginger
  • 2 cloves garlic – crushed


  • Preheat oven to 200°C (180°C fan bake).
  • Line an oven dish with baking paper.
  • Place the salmon in the dish, skin-side down.
  • Whisk all the other ingredients in a small bowl or jug.
  • Brush the salmon with the glaze.
  • Bake for 10 minutes.
  • Transfer to plates to serve.
