Apricot and Mustard Glazed Salmon

Dinner doesn’t get much easier than this – simply brush the salmon with a flavoursome glaze, bake it in a hot oven and serve with potatoes and salad.

Ingredients
- 4 x 150g skin-on, boneless salmon fillets
- ¼ cup apricot jam
- 1 tablespoon wholegrain mustard
- 1 tablespoon dijon mustard
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 2 teaspoons grated fresh ginger
- 2 cloves garlic – crushed
Method
- Preheat oven to 200°C (180°C fan bake).
- Line an oven dish with baking paper.
- Place the salmon in the dish, skin-side down.
- Whisk all the other ingredients in a small bowl or jug.
- Brush the salmon with the glaze.
- Bake for 10 minutes.
- Transfer to plates to serve.
