With piquant flavours, healthy vegetables and a nice crunch on top, this salad is hard to beat.

Ingredients

  • 3 cups thinly sliced cabbage
  • 3 cups thinly sliced red cabbage
  • 1 red capsicum – sliced
  • 1 carrot – peeled and julienned
  • 3 spring onions – sliced
  • ½ cup chopped crispy noodles
  • ½ cup toasted cashews
  • 1 tablespoon sesame seeds
  • 1 tablespoon chopped fresh coriander

Sesame Dressing

  • ¼ cup sesame oil
  • ¼ cup rice wine vinegar
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Method

  • To make the Sesame Dressing, whisk all the ingredients in a small bowl or jug.
  • To make the salad, place the cabbage, capsicum, carrot and spring onions in a large salad bowl.
  • Add the dressing and toss to coat the salad evenly.
  • Serve topped with the crispy noodles, cashews, sesame seeds and coriander.
