With piquant flavours, healthy vegetables and a nice crunch on top, this salad is hard to beat.

Ingredients
- 3 cups thinly sliced cabbage
- 3 cups thinly sliced red cabbage
- 1 red capsicum – sliced
- 1 carrot – peeled and julienned
- 3 spring onions – sliced
- ½ cup chopped crispy noodles
- ½ cup toasted cashews
- 1 tablespoon sesame seeds
- 1 tablespoon chopped fresh coriander
Sesame Dressing
- ¼ cup sesame oil
- ¼ cup rice wine vinegar
- 2 tablespoons honey
- 2 tablespoons lime juice
- 2 teaspoons grated fresh ginger
- 1 teaspoon salt
- ½ teaspoon ground black pepper
Method
- To make the Sesame Dressing, whisk all the ingredients in a small bowl or jug.
- To make the salad, place the cabbage, capsicum, carrot and spring onions in a large salad bowl.
- Add the dressing and toss to coat the salad evenly.
- Serve topped with the crispy noodles, cashews, sesame seeds and coriander.
