This is very much a café-style breakfast. It looks superb and tastes incredible.
Ingredients
For the feta toast with crumbed egg yolks
- 4 egg yolks
- ½ cup fine breadcrumbs
- Salt and ground black pepper, to taste
- Cooking oil, for frying
- 4 slices sourdough — toasted and buttered
- ¼ cup crumbled feta
- Fresh parsley sprigs, to garnish (optional)
For the avocado smash
- Flesh of 2 avocados — diced
- 2 teaspoons sambal oelek
- A squeeze of lime juice
- Salt and ground black pepper, to taste
Method
For the avocado & feta toast with crumbed egg yolks
- Place the egg yolks on baking paper in the freezer for 30 minutes.
- While the yolks are freezing, make the Avocado Smash by placing the diced avocados, sambal oelek, lime juice, salt and pepper in a medium bowl and mashing a little.
- Combine the breadcrumbs with the salt and pepper on a plate. Add the frozen egg yolks and turn to coat.
- Heat about 5mm oil in a small pan and fry the crumbed egg yolks until golden.
- To assemble, divide the Avocado Smash between the pieces of buttered toast and top with a crumbed egg yolk and the crumbled feta. Garnish with parsley, if desired.
