Ingredients

For the bacon, brie & apricot toasted sandwich with balsamic reduction

  • ⅓ cup balsamic vinegar
  • 8 rashers bacon
  • 1 loaf ciabatta or sourdough bread — cut into eight slices
  • Apricot jam
  • Chopped fresh rosemary
  • 125g brie cheese — sliced
  • Butter or margarine

Method

For the bacon, brie & apricot toasted sandwich with balsamic reduction

  • Put the vinegar in a microwave-safe cup. Microwave, stirring every minute until it starts to boil, then every 20 seconds until it becomes syrupy.
  • Cook the bacon and cool on paper towels.
  • Spread four slices of bread with apricot jam and sprinkle with rosemary.
  • Add slices of brie and then the bacon.
  • Top each with another slice of bread. Butter the outsides of the bread.
  • Heat a large pan over a low heat and cook until the cheese is melted and the toasted sandwiches are golden brown.
  • Serve drizzled with the balsamic reduction.
