Ingredients
For the bacon, brie & apricot toasted sandwich with balsamic reduction
- ⅓ cup balsamic vinegar
- 8 rashers bacon
- 1 loaf ciabatta or sourdough bread — cut into eight slices
- Apricot jam
- Chopped fresh rosemary
- 125g brie cheese — sliced
- Butter or margarine
Method
For the bacon, brie & apricot toasted sandwich with balsamic reduction
- Put the vinegar in a microwave-safe cup. Microwave, stirring every minute until it starts to boil, then every 20 seconds until it becomes syrupy.
- Cook the bacon and cool on paper towels.
- Spread four slices of bread with apricot jam and sprinkle with rosemary.
- Add slices of brie and then the bacon.
- Top each with another slice of bread. Butter the outsides of the bread.
- Heat a large pan over a low heat and cook until the cheese is melted and the toasted sandwiches are golden brown.
- Serve drizzled with the balsamic reduction.
