An ideal lunchbox treat and a super way to use up bananas that are past their peak.

Ingredients
- 110g butter – softened
- 1 cup brown sugar
- 1 egg
- 1½ teaspoons vanilla extract
- 1 cup self-rising flour
- ½ teaspoon salt
- 2 over-ripe bananas – mashed
- 1 cup chocolate chips
Method
- Preheat oven to 180°C (160°C fan bake).
- Line a 20cm square slice tin with baking paper.
- Cream the butter and sugar until light and fluffy.
- Beat in the egg and vanilla.
- Fold in the flour and salt.
- Mix in the bananas and three quarters of the chocolate chips
- Transfer to the prepared tin and sprinkle with the remaining chocolate chips.
- Bake for 30 minutes or until a skewer comes out clean.
- Leave to cool in the tin before cutting into 12 bars.
