Banana Chocolate Chip Bars

An ideal lunchbox treat and a super way to use up bananas that are past their peak.

Ingredients

  • 110g butter – softened
  • 1 cup brown sugar
  • 1 egg
  • 1½ teaspoons vanilla extract
  • 1 cup self-rising flour
  • ½ teaspoon salt
  • 2 over-ripe bananas – mashed
  • 1 cup chocolate chips

Method

  • Preheat oven to 180°C (160°C fan bake).
  • Line a 20cm square slice tin with baking paper.
  • Cream the butter and sugar until light and fluffy.
  • Beat in the egg and vanilla.
  • Fold in the flour and salt.
  • Mix in the bananas and three quarters of the chocolate chips
  • Transfer to the prepared tin and sprinkle with the remaining chocolate chips.
  • Bake for 30 minutes or until a skewer comes out clean.
  • Leave to cool in the tin before cutting into 12 bars.
