A perfect winter dessert that’s made within minutes. Serve with ice cream and cream if you like.
Ingredients
For the banana fritters
- 100g self-rising flour
- 1 teaspoon baking powder
- A pinch of salt
- 140ml iced water
- 3 very ripe bananas — halved lengthwise and acrosswise
- Oil, for frying
- 2 tablespoons caster sugar
- 1 teaspoon cinnamon
- A good pinch of chilli powder
Method
For the banana fritters
- Whisk together the flour, baking powder and salt in a large bowl.
- Whisk in the iced water.
- Add the bananas and turn to coat in the batter.
- Heat the oil in a wok or deep-fryer.
- Working in batches, deep-fry the bananas until golden brown. Drain on paper towels.
- Mix the sugar, cinnamon and chilli in a small bowl.
- Sprinkle over the warm bananas and serve.
