Banana fritters

A perfect winter dessert that’s made within minutes. Serve with ice cream and cream if you like.



For the banana fritters

  • 100g self-rising flour
  • 1 teaspoon baking powder
  • A pinch of salt
  • 140ml iced water
  • 3 very ripe bananas — halved lengthwise and acrosswise
  • Oil, for frying
  • 2 tablespoons caster sugar
  • 1 teaspoon cinnamon
  • A good pinch of chilli powder


For the banana fritters

  • Whisk together the flour, baking powder and salt in a large bowl.
  • Whisk in the iced water.
  • Add the bananas and turn to coat in the batter.
  • Heat the oil in a wok or deep-fryer.
  • Working in batches, deep-fry the bananas until golden brown. Drain on paper towels.
  • Mix the sugar, cinnamon and chilli in a small bowl.
  • Sprinkle over the warm bananas and serve.
