Béarnaise Sauce for Steak

My version of this posh French sauce is so simple you can whisk it up and serve it over your favourite steak any night of the week.

Ingredients

  • 60g butter – diced
  • 2 egg yolks
  • ¼ cup cream
  • 2 tablespoons very finely diced onion
  • 2 teaspoons white wine vinegar
  • 2 teaspoon lemon juice
  • 1 teaspoon dried tarragon
  • ½ teaspoon salt
  • A pinch of black pepper
  • A pinch of cayenne pepper

Method

  • Combine all the ingredients in a small saucepan.
  • Whisk constantly over a low heat for 2–3 minutes until thick and creamy.
  • Serve immediately.
