In a bowl, add the beef , 2 tablespoons of cornflour , 1 tablespoon of rice wine vinegar and season with salt and pepper , Mix together and set aside while you prepare the sauce
In a separate bowl combine the sauce ingredients
Peel the carrot and dice the stir-fry vegetables
Heat oil in a pan and fry the beef mixture until lightly browned
Remove the beef from the pan and set aside
In the same pan add the stir-fry vegetables and fry until soft
Stir in the sauce and add the beef. Allow the stir-fry to cook until the sauce thickens
Serve with rice
