Ingredients
For the blueberry thyme crush cocktail
- ½ cup fresh blueberries
- 2 tablespoons sugar
- 2 tablespoons lemon juice
- 2 sprigs fresh thyme
- ½ cup vodka or gin
- Ice cubes
- Soda water
- Fresh thyme sprigs, to garnish (optional)
Method
For the blueberry thyme crush cocktail
- Combine the blueberries, sugar, lemon juice and thyme in a large bowl or jug. Smash together, then allow to sit for 15 minutes.
- Divide evenly between 2 tall glasses.
- Divide the vodka or gin evenly between the glasses and stir to mix.
- Fill the glasses with ice cubes, then top up with soda water and garnish with thyme, if desired.
