Ingredients

  • 4 – 5 cups stale bread – broken up
  • ½ cup raisins
  • 50g butter - divided
  • 4 eggs – beaten
  • 2 cups milk
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Method

  • Preheat the oven to 180oC (160oC fan bake). Use 15g of butter to coat the inside of 20cm x 20cm baking dish.
  • Place the bread and raisins in the prepared baking dish.
  • Whisk all the remaining ingredients together and pour over the bread. Cut up the remaining 35g of butter and sprinkle over the pudding.
  • Bake for 45 minutes or until the top of the pudding springs back.
