An old fashioned and comforting dessert.
Ingredients
- 4 – 5 cups stale bread – broken up
- ½ cup raisins
- 50g butter - divided
- 4 eggs – beaten
- 2 cups milk
- ¾ cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
Method
- Preheat the oven to 180oC (160oC fan bake). Use 15g of butter to coat the inside of 20cm x 20cm baking dish.
- Place the bread and raisins in the prepared baking dish.
- Whisk all the remaining ingredients together and pour over the bread. Cut up the remaining 35g of butter and sprinkle over the pudding.
- Bake for 45 minutes or until the top of the pudding springs back.
