Ingredients

For the brined chicken

  • 1 whole chicken

For the herb & honey brine

  • 2 litres water
  • ⅓ cup kosher or rock salt (not table salt)
  • ¼ cup honey
  • 5 cloves garlic — peeled and smashed
  • 3 dried bay leaves
  • 2 lemons — sliced
  • 1 tablespoon black peppercorns
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 3 sprigs fresh parsley

Method

For the brined chicken

  • To make the Herb & Honey Brine, combine all the ingredients in a large saucepan. Bring to a simmer over a medium heat.
  • Simmer for 3–4 minutes or until the salt has dissolved.
  • Turn off the heat and cool completely.
  • Add the chicken to the cooled brine, making sure it is completely submerged.
  • Cover and refrigerate for 8–24 hours.
  • Remove the chicken from the brine and rinse with cool water. Pat dry with paper towels.
  • Roast or barbeque the chicken as desired.
