Ingredients
For the brined chicken
- 1 whole chicken
For the herb & honey brine
- 2 litres water
- ⅓ cup kosher or rock salt (not table salt)
- ¼ cup honey
- 5 cloves garlic — peeled and smashed
- 3 dried bay leaves
- 2 lemons — sliced
- 1 tablespoon black peppercorns
- 3 sprigs fresh rosemary
- 3 sprigs fresh thyme
- 3 sprigs fresh parsley
Method
For the brined chicken
- To make the Herb & Honey Brine, combine all the ingredients in a large saucepan. Bring to a simmer over a medium heat.
- Simmer for 3–4 minutes or until the salt has dissolved.
- Turn off the heat and cool completely.
- Add the chicken to the cooled brine, making sure it is completely submerged.
- Cover and refrigerate for 8–24 hours.
- Remove the chicken from the brine and rinse with cool water. Pat dry with paper towels.
- Roast or barbeque the chicken as desired.
