A luscious and earthy sauce that can be made ahead of time and reheated.

- 1 tablespoon cooking oil
- 1 small onion - finely dice
- 45g butter - divided
- 350g brown button mushrooms - sliced
- 2 teaspoons fresh rosemary - finely chopped
- 1/2 teaspoon garlic salt
- 1/4 teaspoon black pepper
- 2 tablespoons balsamic vinegar
- 1 1/2 tablespoons brown sugar
- 1 tablespoon soy sauce
- 3 cloves garlic - crushed

Method
- Heat the oil in a frying pan over a medium heat. Sauté the onion for a few minutes.
- Add in 30g butter, mushrooms, rosemary, garlic salt and pepper. Cook for 3 - 4minutes
- Add in the balsamic vinegar, brown sugar, soy sauce and garlic. Cook for a minute then add in the additional 15g butter. Stir well and serve with steak
