Don’t overcook this sweet and spicy pork dish. To be tender and juicy, pork fillet needs to be slightly pink in the centre. A digital thermometer helps you get the timing right.

  • 1 pork fillet (400–500g)
  • 1–2 teaspoons cajun seasoning
  • 1 tablespoon cooking oil
  • 30g butter
  • 2 tablespoons honey
  • ¼ cup chicken stock

  • Preheat oven to 190°C (170°C fan bake).
  • Sprinkle cajun seasoning all over the pork and rub in.
  • Heat the oil in an ovenproof pan over a medium-high heat. Sear the pork on all sides. Set aside on a plate.
  • Add the butter, honey and stock to the pan and bring to a simmer. Return the pork to the pan then place the pan in the oven for 13–15 minutes until the pork is cooked through or the internal temperature reaches 66–68°C.
  • Transfer to a warm plate and leave to rest for 3–5 minutes.
  • Slice the pork and serve drizzled with the honey sauce from the pan.
