Don’t overcook this sweet and spicy pork dish. To be tender and juicy, pork fillet needs to be slightly pink in the centre. A digital thermometer helps you get the timing right.

Ingredients
- 1 pork fillet (400–500g)
- 1–2 teaspoons cajun seasoning
- 1 tablespoon cooking oil
- 30g butter
- 2 tablespoons honey
- ¼ cup chicken stock
Method
- Preheat oven to 190°C (170°C fan bake).
- Sprinkle cajun seasoning all over the pork and rub in.
- Heat the oil in an ovenproof pan over a medium-high heat. Sear the pork on all sides. Set aside on a plate.
- Add the butter, honey and stock to the pan and bring to a simmer. Return the pork to the pan then place the pan in the oven for 13–15 minutes until the pork is cooked through or the internal temperature reaches 66–68°C.
- Transfer to a warm plate and leave to rest for 3–5 minutes.
- Slice the pork and serve drizzled with the honey sauce from the pan.
