Cantonese Sweet and Sour Pork

Ingredients

Marinade

  • 800g pork steaks - cut into bite size pieces
  • 1/4 cup soy sauce
  • 1 tablespoon fresh ginger - grated
  • 4 cloves garlic - crushed
  • 1 teaspoon onion powder
  • 1/2 cup cornflour

Stir fry

  • Cooking oil
  • 1 red capsicum - chopped
  • 1 onion - chopped
  • 2 cups frozen mango chunks - thawed

Sauce

  • 1/4 cup tomato paste
  • 1/2 cup white vinegar
  • 1/2 cup sugar
  • 1/4 cup water
  • 2 tablespoons soy sauce

Method

Cantonese Sweet & Sour Pork

  • Whisk together the 1/4 cup soy sauce, ginger, garlic and onion powder. Toss through the pork and marinate for 1 hour, then mix through the cornflour.
  • In a large pan or wok heat 1cm cooking oil over a high heat.
  • Cook the pork in batches - set aside on paper towels.
  • Tip out all but 2 tablespoons of oil. Over a medium heat, sauté the capsicum and onion for several minutes.
  • Stir through the tomato paste and cook for an additional minute.
  • Whisk all the sauce ingredients together and add to the pan. Simmer for 5 minutes.
  • Add in the mango and pork and heat through before serving with rice.
