Cantonese Sweet and Sour Pork

Ingredients
Marinade
- 800g pork steaks - cut into bite size pieces
- 1/4 cup soy sauce
- 1 tablespoon fresh ginger - grated
- 4 cloves garlic - crushed
- 1 teaspoon onion powder
- 1/2 cup cornflour
Stir fry
- Cooking oil
- 1 red capsicum - chopped
- 1 onion - chopped
- 2 cups frozen mango chunks - thawed
Sauce
- 1/4 cup tomato paste
- 1/2 cup white vinegar
- 1/2 cup sugar
- 1/4 cup water
- 2 tablespoons soy sauce
Method
Cantonese Sweet & Sour Pork
- Whisk together the 1/4 cup soy sauce, ginger, garlic and onion powder. Toss through the pork and marinate for 1 hour, then mix through the cornflour.
- In a large pan or wok heat 1cm cooking oil over a high heat.
- Cook the pork in batches - set aside on paper towels.
- Tip out all but 2 tablespoons of oil. Over a medium heat, sauté the capsicum and onion for several minutes.
- Stir through the tomato paste and cook for an additional minute.
- Whisk all the sauce ingredients together and add to the pan. Simmer for 5 minutes.
- Add in the mango and pork and heat through before serving with rice.
