Sweet and warmly spiced carrots and so very easy to make.
Ingredients
For the carrots with spiced butter
- 6–7 carrots — peeled
- 80g butter
- 2 teaspoons honey
- 2 spring onions — finely chopped, plus extra for garnish
- ¼ teaspoon allspice or cinnamon
Method
For the carrots with spiced butter
- Cut the carrots into 1cm-thick batons.
- Boil in salted boiling water until just tender. Drain into a colander.
- Heat the butter, honey, spring onions and allspice or cinnamon in the saucepan the carrots were cooked in. Cook, stirring, until the butter has melted.
- Return the carrots to the saucepan and toss to coat.
- Serve topped with extra spring onion.
