Sweet and warmly spiced carrots and so very easy to make.

Ingredients

For the carrots with spiced butter

  • 6–7 carrots — peeled
  • 80g butter
  • 2 teaspoons honey
  • 2 spring onions — finely chopped, plus extra for garnish
  • ¼ teaspoon allspice or cinnamon

Method

For the carrots with spiced butter

  • Cut the carrots into 1cm-thick batons.
  • Boil in salted boiling water until just tender. Drain into a colander.
  • Heat the butter, honey, spring onions and allspice or cinnamon in the saucepan the carrots were cooked in. Cook, stirring, until the butter has melted.
  • Return the carrots to the saucepan and toss to coat.
  • Serve topped with extra spring onion.
