Charred Corn and Avocado Salad

Charred corn is so delicious. With the addition of capsicum, spring onions and avocado it becomes an irresistible delight.

Ingredients

  • 3 corn cobs
  • 2 tablespoons olive oil
  • 1 green capsicum – diced
  • 1 onion – diced
  • 1 clove garlic – crushed
  • 2 spring onions – chopped
  • 1 avocado – diced
  • Juice of 1 lime
  • Salt and pepper to taste

Method

  • Heat a frying pan over a high heat. Add in the corn and turn often to brown on all sides.
  • Leave to cool. With a sharp knife, cut the kernels off the cobs. Place in a large bowl.
  • Heat the oil in the same pan and sauté the green capsicum for 2 minutes. Add in the onion and cook for a further 2 minutes.
  • Stir through the garlic. Add to the bowl of charred corn.
  • Add in half of the spring onions, the avocado and lime juice. Season to taste, serve in a bowl or on a platter. Sprinkle over the remaining spring onion.
