Charred corn is so delicious. With the addition of capsicum, spring onions and avocado it becomes an irresistible delight.
Ingredients
- 3 corn cobs
- 2 tablespoons olive oil
- 1 green capsicum – diced
- 1 onion – diced
- 1 clove garlic – crushed
- 2 spring onions – chopped
- 1 avocado – diced
- Juice of 1 lime
- Salt and pepper to taste
Method
- Heat a frying pan over a high heat. Add in the corn and turn often to brown on all sides.
- Leave to cool. With a sharp knife, cut the kernels off the cobs. Place in a large bowl.
- Heat the oil in the same pan and sauté the green capsicum for 2 minutes. Add in the onion and cook for a further 2 minutes.
- Stir through the garlic. Add to the bowl of charred corn.
- Add in half of the spring onions, the avocado and lime juice. Season to taste, serve in a bowl or on a platter. Sprinkle over the remaining spring onion.
