Cheese, Bacon and Maple Scones

The combination of flavours in these scones is absolutely scrumptious. If you don’t have buttermilk you can stir 1½ tablespoons lemon juice or white vinegar into 1½ cups milk and use that instead.

Ingredients

  • 4 cups flour
  • 200g bacon – diced and cooked
  • 1 cup grated tasty cheese
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon garlic salt
  • 170g butter – grated
  • 1½ cups buttermilk
  • ¼ cup maple syrup

Method

  • Line a baking tray with baking paper.
  • Combine the flour, bacon, cheese, baking powder, baking soda, garlic salt and butter in a large bowl.
  • Whisk the buttermilk and maple syrup in a medium bowl. Add to the flour mixture and mix to form a dough.
  • Tip onto a lightly floured work surface and knead 3–4 times until it comes together.
  • Using a rolling pin, roll out to a 3cm thickness.
  • Cut out into 12 rounds and arrange on the prepared tray.
  • Chill in the freezer for 15 minutes.
  • Preheat oven to 220°C (200°C fan bake).
  • Bake for 15–18 minutes or until golden brown.
