These chewy cookies are full of tasty figs and toasted pecans.

Ingredients

For the chewy oat fig cookies

  • 1¼ cups rolled oats
  • 1 cup pecans — toasted and chopped
  • 1 cup chopped dried figs
  • 1¼ cups flour
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • 170g butter — softened
  • 1½ cups brown sugar
  • 1 egg
  • 1½ teaspoons vanilla extract

Method

For the chewy oat fig cookies

  • Preheat the oven to 180°C (160°C fan bake). Line 2 baking trays with baking paper.
  • Combine the rolled oats, pecans and figs in a medium bowl. Set aside.
  • Whisk the flour, baking powder, baking soda, cinnamon and salt in a small mixing bowl. Set aside.
  • Cream the butter and sugar in an electric mixer until light and fluffy.
  • Add the egg and vanilla and mix well.
  • Mix in the flour mixture at low speed until just combined.
  • Add the oat mixture and stir until evenly distributed.
  • Roll heaped tablespoons of mixture into about 26 balls, place on the prepared trays, leaving room in between for spreading. Flatten slightly
  • Bake for 16–18 minutes or until golden brown.
