These chewy cookies are full of tasty figs and toasted pecans.
Ingredients
For the chewy oat fig cookies
- 1¼ cups rolled oats
- 1 cup pecans — toasted and chopped
- 1 cup chopped dried figs
- 1¼ cups flour
- ¾ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- ½ teaspoon salt
- 170g butter — softened
- 1½ cups brown sugar
- 1 egg
- 1½ teaspoons vanilla extract
Method
For the chewy oat fig cookies
- Preheat the oven to 180°C (160°C fan bake). Line 2 baking trays with baking paper.
- Combine the rolled oats, pecans and figs in a medium bowl. Set aside.
- Whisk the flour, baking powder, baking soda, cinnamon and salt in a small mixing bowl. Set aside.
- Cream the butter and sugar in an electric mixer until light and fluffy.
- Add the egg and vanilla and mix well.
- Mix in the flour mixture at low speed until just combined.
- Add the oat mixture and stir until evenly distributed.
- Roll heaped tablespoons of mixture into about 26 balls, place on the prepared trays, leaving room in between for spreading. Flatten slightly
- Bake for 16–18 minutes or until golden brown.
