For the chicken & bacon sausage rolls
- 500g chicken mince
- 1 cup panko breadcrumbs
- 1 cup finely grated parmesan
- 8 rashers bacon — finely diced and fried until crispy
- 1 onion — finely diced
- 5 cloves garlic — crushed
- 1⁄3 cup finely chopped fresh parsley
- 3 tablespoons finely chopped fresh chives
- Ground black pepper, to taste
- 350g roll flaky pastry
- 1 egg — beaten
Method
For the chicken & bacon sausage rolls
- Preheat the oven to 200°C (180°C fan bake). Line 1–2 baking trays with baking paper.
- In the bowl of an electric mixer, combine the chicken mince, breadcrumbs, parmesan, bacon, onion, garlic, parsley, chives and pepper. Mix until thoroughly combined.
- Roll out the pastry on a lightly floured surface and cut lengthwise into 13cm-wide strips.
- Use your hands to form the chicken mixture into sausage shapes and place one down the centre of each strip of pastry.
- Baste the edge of the pastry with the beaten egg then roll up to enclose the chicken mixture.
- Cut to your desired size and place on the prepared trays with the seam to the underside.
- Brush with the beaten egg.
- Bake for 20–30 minutes or until the filling is cooked through and the pastry is golden brown.
