Chilli and Lime Fish with Avocado Salsa

Ingredients

  • 4 x 150g fish fillets
  • 1 tablespoon cooking oil

Spice Mix

  • 1 teaspoon brown sugar
  • ¾ teaspoon salt
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ - ½ teaspoon chilli powder
  • ¼ teaspoon black pepper

Avocado Salsa

  • 1 cup cherry tomatoes – quartered
  • 1 avocado – diced
  • 1/3 cup red onion – finely diced
  • 1/3 cup red capsicum – finely diced
  • 3 tablespoons fresh coriander – finely chopped
  • 2 cloves garlic – crushed Zest of a lime
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • Sour cream for serving

Method

  • In a medium bowl combine the spice mix ingredients together. Add in the fish and coat well.
  • In another bowl, mix all the salsa ingredients together – set aside.
  • Heat the oil in a large frying pan over a medium heat and cook the fish fillets on both sides until golden brown and cooked through.
  • Serve the fish fillets topped with a spoonful of avocado salsa and a dollop of sour cream.
