A fresh and zingy meal with all the ingredients singing in harmony.
Ingredients
- 4 x 150g fish fillets
- 1 tablespoon cooking oil
Spice Mix
- 1 teaspoon brown sugar
- ¾ teaspoon salt
- ½ teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ - ½ teaspoon chilli powder
- ¼ teaspoon black pepper
Avocado Salsa
- 1 cup cherry tomatoes – quartered
- 1 avocado – diced
- 1/3 cup red onion – finely diced
- 1/3 cup red capsicum – finely diced
- 3 tablespoons fresh coriander – finely chopped
- 2 cloves garlic – crushed Zest of a lime
- 2 tablespoons lime juice
- Salt and pepper to taste
- Sour cream for serving
Method
- In a medium bowl combine the spice mix ingredients together. Add in the fish and coat well.
- In another bowl, mix all the salsa ingredients together – set aside.
- Heat the oil in a large frying pan over a medium heat and cook the fish fillets on both sides until golden brown and cooked through.
- Serve the fish fillets topped with a spoonful of avocado salsa and a dollop of sour cream.
