Ingredients
Cake
- ½ cup each: flour, caster sugar
- 2 tablespoons cocoa powder
- 2 teaspoons baking powder
- Pinch salt
- 2 tablespoons vegetable oil
- 1 egg
- ½ cup hot water
- ½ teaspoon vanilla extract
Chocolate icing
- 60g cooking chocolate – chopped
- ¼ cup each: cream, hot water
- 2 tablespoons golden syrup
- Coconut for coating
Method
Cake
- Whisk all the cake ingredients together.
- Spray silicon moulds with baking spray.
- Pour the cake mixture halfway up each mould.
- Microwave for 2 minutes. Set aside for a few minutes to cool before taking them out of the moulds.
Chocolate Icing
- Chocolate icing – Heat all the icing ingredients together in the microwave and whisk until well combined. Set aside to cool.
- Dip each chocolate cake into the chocolate icing, using two forks, then into the coconut.
- Serve with some whipped cream.
