Chocolate Lamington Microwaved

Chocolate on the inside and the outside. These are so quick to make -



  • ½ cup each: flour, caster sugar
  • 2 tablespoons cocoa powder
  • 2 teaspoons baking powder
  • Pinch salt
  • 2 tablespoons vegetable oil
  • 1 egg
  • ½ cup hot water
  • ½ teaspoon vanilla extract

Chocolate icing

  • 60g cooking chocolate – chopped
  • ¼ cup each: cream, hot water
  • 2 tablespoons golden syrup
  • Coconut for coating



  • Whisk all the cake ingredients together.
  • Spray silicon moulds with baking spray.
  • Pour the cake mixture halfway up each mould.
  • Microwave for 2 minutes. Set aside for a few minutes to cool before taking them out of the moulds.

Chocolate Icing

  • Chocolate icing – Heat all the icing ingredients together in the microwave and whisk until well combined. Set aside to cool.
  • Dip each chocolate cake into the chocolate icing, using two forks, then into the coconut.
  • Serve with some whipped cream.
