Ingredients

For the citrus & pistachio no-bake slice

  • 395g can condensed milk
  • 200g butter
  • Zest of 1 orange — finely grated
  • Zest of 1 lemon — finely grated
  • 500g plain sweet biscuits — crushed
  • 3⁄4 cup roughly chopped toasted pistachios

For the CITRUS ICING

  • 2 1⁄2 cups icing sugar
  • 50g butter — melted
  • Juice of 1 orange
  • Juice of 1 lemon

Method

For the citrus & pistachio no-bake slice

  • Line a 28 x 18cm slice tin with baking paper.
  • Heat the condensed milk and butter in a large saucepan.
  • Mix in the orange and lemon zest, then the crushed biscuits and pistachios.
  • Press into the prepared slice tin and refrigerate for about 40 minutes.
  • To make the Citrus Icing, mix the icing sugar, melted butter and as much orange and lemon juice as needed to achieve a spreadable consistency.
  • Spread over the slice and refrigerate until set.
