Coffee Walnut and Oak Slice

This is one of my favourite slices to make. The coffee, oats and walnuts combined with a 
chocolate topping makes it very delectable.

Ingredients

Base

  • 125g butter
  • 1 cup brown sugar
  • 1 tablespoon instant coffee
  • 1 ¼ cups rolled oats
  • ¾ cup walnuts – chopped
  • ¾ cup flour
  • ¼ cup self-rising flour
  • ½ teaspoon baking soda
  • 1 egg - whisked

Topping

  • 200g chocolate
  • 1 tablespoon canola oil

Method

  • Preheat the oven to 180oC (160oC fan bake). Line an 18cm x 28cm slice pan with baking paper.
  • In a large microwave proof bowl, melt the butter.
  • Whisk in the brown sugar and coffee.
  • Stir in all the remaining base ingredients. Press into the prepared slice pan.
  • Bake for 25 minutes or until golden. Cool in the pan.

Topping

  • In a microwave proof bowl, melt the chocolate and oil together for 1 minute, stir, then microwave in 30 second intervals until the chocolate is smooth and melted.
  • Pour the chocolate over the slice and spread evenly. Leave to set before cutting into squares.
