This is one of my favourite slices to make. The coffee, oats and walnuts combined with a
chocolate topping makes it very delectable.
Coffee Walnut and Oak Slice

Ingredients
Base
- 125g butter
- 1 cup brown sugar
- 1 tablespoon instant coffee
- 1 ¼ cups rolled oats
- ¾ cup walnuts – chopped
- ¾ cup flour
- ¼ cup self-rising flour
- ½ teaspoon baking soda
- 1 egg - whisked
Topping
- 200g chocolate
- 1 tablespoon canola oil
Method
- Preheat the oven to 180oC (160oC fan bake). Line an 18cm x 28cm slice pan with baking paper.
- In a large microwave proof bowl, melt the butter.
- Whisk in the brown sugar and coffee.
- Stir in all the remaining base ingredients. Press into the prepared slice pan.
- Bake for 25 minutes or until golden. Cool in the pan.
Topping
- In a microwave proof bowl, melt the chocolate and oil together for 1 minute, stir, then microwave in 30 second intervals until the chocolate is smooth and melted.
- Pour the chocolate over the slice and spread evenly. Leave to set before cutting into squares.
