We always have green and red cabbages in the garden all year round. This is a nice change from ordinary coleslaw and pairs very nicely with pork.
Ingredients
Coleslaw
- 4 cups finely sliced red cabbage
- 4 cups finely sliced green cabbage
- 2 carrots - peeled and grated
- 1 apple - thinly sliced
- 1/3 cup red onion - finely diced
- 1/4 cup parsley - finely chopped
- 2 tablespoons poppy seeds
Dressing
- 1 cup mayonnaise
- 1/4 cup sugar
- 1/4 cup apple cider vinegar

Method
- Combine all the coleslaw ingredients together in a large bowl
- In a small bowl, whisk all the dressing ingredients together
- Toss the dressing through the coleslaw ingredients
- Store in the refrigerator
