We always have green and red cabbages in the garden all year round. This is a nice change from ordinary coleslaw and pairs very nicely with pork.

Ingredients

Coleslaw

  • 4 cups finely sliced red cabbage
  • 4 cups finely sliced green cabbage
  • 2 carrots - peeled and grated
  • 1 apple - thinly sliced
  • 1/3 cup red onion - finely diced
  • 1/4 cup parsley - finely chopped
  • 2 tablespoons poppy seeds

Dressing

  • 1 cup mayonnaise
  • 1/4 cup sugar
  • 1/4 cup apple cider vinegar

Method

  • Combine all the coleslaw ingredients together in a large bowl
  • In a small bowl, whisk all the dressing ingredients together
  • Toss the dressing through the coleslaw ingredients
  • Store in the refrigerator
