For the creamy scrambled eggs

  • 4 eggs
  • 2 tablespoons mayonnaise
  • Salt and ground black pepper, to taste
  • 2 slices bread — toasted and buttered
  • 1 tablespoon chopped fresh chives, to garnish
  • Microgreens, to garnish (optional)

Method

For the creamy scrambled eggs

  • Whisk the eggs, mayonnaise and salt and pepper in a bowl.
  • Heat a non-stick pan over a medium heat and add the egg mixture.
  • Stir continuously with a wooden spoon until the eggs come together and are cooked as you like them.
  • Serve on buttered toast sprinkled with chives and microgreens, if desired.
