- 4 eggs
- 2 tablespoons mayonnaise
- Salt and ground black pepper, to taste
- 2 slices bread — toasted and buttered
- 1 tablespoon chopped fresh chives, to garnish
- Microgreens, to garnish (optional)
Method
For the creamy scrambled eggs
- Whisk the eggs, mayonnaise and salt and pepper in a bowl.
- Heat a non-stick pan over a medium heat and add the egg mixture.
- Stir continuously with a wooden spoon until the eggs come together and are cooked as you like them.
- Serve on buttered toast sprinkled with chives and microgreens, if desired.
