Crispy mayonnaise chicken with honey mustard coleslaw

This is a wonderfully easy way of crumbing chicken and the coleslaw dressing is scrumptious.



For the crispy mayonnaise chicken

  • 6 large skinless, boneless chicken thighs
  • ½ cup mayonnaise
  • ½ teaspoon garlic salt
  • ¼ teaspoon ground white pepper
  • 1½ cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • ½ teaspoon garlic salt
  • ½ teaspoon celery salt
  • ½ teaspoon chilli flakes
  • Cooking oil, for frying

For the honey mustard coleslaw

  • ⅓ cabbage – finely sliced
  • 1 carrot – peeled and grated
  • ½ red onion – finely diced
  • ½ cup mayonnaise
  • 2 tablespoons dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • Ground black pepper, to taste


For the crispy mayonnaise chicken with honey mustard coleslaw

  • To make the Honey Mustard Coleslaw, combine the cabbage, carrot and onion in a large bowl.
  • Mix the mayonnaise, mustard, honey, lemon juice and pepper in a small bowl, then toss through the cabbage mixture.
  • Coat the chicken in the mayonnaise and season with the garlic salt and white pepper.
  • Whisk the flour, baking powder, paprika, thyme, pepper, salts and chilli flakes in a shallow bowl. Add the chicken and turn to coat well.
  • Heat the oil in a large pan and, working in batches if necessary, pan-fry or deep-fry the chicken until golden brown and cooked through.
  • Serve with the Honey Mustard Coleslaw.
