This is a wonderfully easy way of crumbing chicken and the coleslaw dressing is scrumptious.
Ingredients
For the crispy mayonnaise chicken
- 6 large skinless, boneless chicken thighs
- ½ cup mayonnaise
- ½ teaspoon garlic salt
- ¼ teaspoon ground white pepper
- 1½ cups flour
- 1 teaspoon baking powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- ½ teaspoon garlic salt
- ½ teaspoon celery salt
- ½ teaspoon chilli flakes
- Cooking oil, for frying
For the honey mustard coleslaw
- ⅓ cabbage – finely sliced
- 1 carrot – peeled and grated
- ½ red onion – finely diced
- ½ cup mayonnaise
- 2 tablespoons dijon mustard
- 2 tablespoons honey
- 1 tablespoon lemon juice
- Ground black pepper, to taste
Method
For the crispy mayonnaise chicken with honey mustard coleslaw
- To make the Honey Mustard Coleslaw, combine the cabbage, carrot and onion in a large bowl.
- Mix the mayonnaise, mustard, honey, lemon juice and pepper in a small bowl, then toss through the cabbage mixture.
- Coat the chicken in the mayonnaise and season with the garlic salt and white pepper.
- Whisk the flour, baking powder, paprika, thyme, pepper, salts and chilli flakes in a shallow bowl. Add the chicken and turn to coat well.
- Heat the oil in a large pan and, working in batches if necessary, pan-fry or deep-fry the chicken until golden brown and cooked through.
- Serve with the Honey Mustard Coleslaw.
