Ingredients
- 1 telegraph cucumber – sliced
- ¼ cup chopped salted roasted peanuts
- Chilli flakes, to serve
- Fresh dill, to serve (optional)
Sriracha Dressing
- 1½ tablespoons soy sauce
- 1½ tablespoons rice wine vinegar
- ½ teaspoon caster sugar
- ½ teaspoon sriracha
- ½ teaspoon sesame oil
- 1 clove garlic – crushed
Method
- To make the Sriracha Dressing, place all the dressing ingredients in a jar and shake well to mix.
- Place the cucumber in a serving bowl, top with the peanuts and drizzle with the dressing.
- Serve with a sprinkle of chilli flakes and dill (if using).
