Ingredients

  • 1 telegraph cucumber – sliced
  • ¼ cup chopped salted roasted peanuts
  • Chilli flakes, to serve
  • Fresh dill, to serve (optional)

Sriracha Dressing

  • 1½ tablespoons soy sauce
  • 1½ tablespoons rice wine vinegar
  • ½ teaspoon caster sugar
  • ½ teaspoon sriracha
  • ½ teaspoon sesame oil
  • 1 clove garlic – crushed

Method

  • To make the Sriracha Dressing, place all the dressing ingredients in a jar and shake well to mix.
  • Place the cucumber in a serving bowl, top with the peanuts and drizzle with the dressing.
  • Serve with a sprinkle of chilli flakes and dill (if using).
