Date, Honey and Nut Loaf

A beautifully easy and deliciously moist loaf.


  • 1 cup dates – halved
  • 1 cup flour
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • A good pinch of nutmeg
  • 2 eggs
  • ¾ cup vegetable oil
  • ½ cup brown sugar
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts


  • Preheat oven to 180°C (160°C fan bake).
  • Line a loaf tin with baking paper.
  • Place the dates in a heatproof bowl or jug and cover with boiling water. Allow to soak for 10 minutes then drain.
  • Whisk the flour, cinnamon, salt and nutmeg In a large bowl.
  • Whisk the eggs, oil, sugar, honey and vanilla in a medium bowl.
  • Gently fold the wet ingredients into the dry ingredients.
  • Fold in the walnuts and the drained dates.
  • Bake for 45–50 minutes or until a skewer comes out clean. Allow to cool in the tin.
