Date, Honey and Nut Loaf

Ingredients
- 1 cup dates – halved
- 1 cup flour
- 1 teaspoon each: cinnamon, baking powder
- ½ teaspoon salt
- A good pinch of nutmeg
- 2 eggs
- ¾ cup vegetable oil
- ½ cup brown sugar
- ¼ cup honey
- 1 teaspoon vanilla extract
- ½ cup chopped walnuts
Method
- Preheat oven to 180°C (160°C fan bake).
- Line a loaf tin with baking paper.
- Place the dates in a heatproof bowl or jug and cover with boiling water. Allow to soak for 10 minutes then drain.
- Whisk the flour, cinnamon, baking powder, salt and nutmeg In a large bowl.
- Whisk the eggs, oil, sugar, honey and vanilla in a medium bowl.
- Gently fold the wet ingredients into the dry ingredients.
- Fold in the walnuts and the drained dates.
- Bake for 45–50 minutes or until a skewer comes out clean. Allow to cool in the tin.
