Crunchy outside and deliciously creamy inside. The ice cream needs to be very solidly frozen before you start.

Ingredients
For the deep-fried ice cream
- 130g cornflakes
- 2 eggs
- 4 scoops ice cream
- Cooking oil, for deep-frying
- Fresh fruit, to serve (optional)
Method
For the deep-fried ice cream
- Place the cornflakes in a shallow bowl and crush with a potato masher.
- Beat the eggs in a small bowl.
- Roll each scoop of ice cream in the egg mixture and then in the crushed cornflakes to coat.
- Return the ice cream balls to the freezer for 20 minutes.
- Repeat the process to add a second layer of egg and cornflakes.
- Heat the oil in a saucepan.
- When it is very hot, deep-fry the ice cream balls for about 10 seconds or just until the cornflakes are nice and golden.
- Serve with fresh fruit, if desired.
