Crunchy outside and deliciously creamy inside. The ice cream needs to be very solidly frozen before you start.



For the deep-fried ice cream

  • 130g cornflakes
  • 2 eggs
  • 4 scoops ice cream
  • Cooking oil, for deep-frying
  • Fresh fruit, to serve (optional)


For the deep-fried ice cream

  • Place the cornflakes in a shallow bowl and crush with a potato masher.
  • Beat the eggs in a small bowl.
  • Roll each scoop of ice cream in the egg mixture and then in the crushed cornflakes to coat.
  • Return the ice cream balls to the freezer for 20 minutes.
  • Repeat the process to add a second layer of egg and cornflakes.
  • Heat the oil in a saucepan.
  • When it is very hot, deep-fry the ice cream balls for about 10 seconds or just until the cornflakes are nice and golden.
  • Serve with fresh fruit, if desired.
