Double Ginger Cookies

  • 125g butter - soften
  • 1 cup sugar
  • 1 egg
  • 1 tablespoon golden syrup
  • 2 cups flour
  • 2 - 3 teaspoons ground ginger
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 - 1/2 cup crystalised ginger - finely chopped

Method

Double Ginger Cookies

  • Preheat oven to 180oC (160oC fan bake). Line two baking trays with baking paper.
  • Cream butter and sugar until light and creamy.
  • Beat in the egg and golden syrup.
  • Whisk the flour, ground ginger, baking powder and baking soda together.
  • Beat the dry ingredients into the butter mixture with the crystalised ginger.
  • Roll the mixture into balls and place on the prepared baking trays. Flatten slightly with the palm of your hand.
  • Bake for 18 - 20 minutes or until golden.
