This is a fun way to use citrus at the height of its season.
These jewel-like slices make a beautiful garnish or table centrepiece.

  • Citrus of your choice — lime, lemon, orange, blood orange, grapefruit

Method

For the dried citrus slices

  • Preheat the oven to 100°C (80°C fan bake). Line baking trays with baking paper.
  • Wash and thinly slice the citrus.
  • Arrange each variety of citrus in a single layer on a separate tray as they will bake at varying times. Limes and lemons take 2–3 hours. Oranges and grapefruit take 3–4 hours.
  • Halfway through the bake time, flip the citrus slices.
  • Once they are dehydrated, transfer them to a wire rack to cool completely.
  • Store in an airtight container.
