Easter Scones
- 1/3 cup each: raisins, dried cranberries
- 1 tablespoon rum, orange juice or water
- 2 cups flour
- 4 teaspoons baking powder
- 2 tablespoons brown sugar
- 2 1/2 teaspoons cinnamon
- 1 1/2 teaspoons mixed spice
- 3/4 teaspoon cardamon
- 90g butter - grated
- 3/4 cup milk
Method
Easter Scones
- Preheat oven to 220C (200oC fan bake). Place an oven tray in the oven to heat.
- In a microwave safe bowl, microwave the raisins, cranberries and rum, orange juice or water for 30 seconds – set aside.
- In a large bowl whisk together the flour, baking powder, brown sugar and spices.
- Rub in the grated butter until it resembles breadcrumbs.
- Make a well and pour in the milk and stir to just combine.
- Place the dough on a floured surface and knead a couple of times. Flatten out the scone mixture and cut out into circles.
- Take the heated tray from the oven. Top with baking paper and then the scones.
- Cook the scones for 12 – 15 minutes or until golden.
