This is a great make ahead dessert for Christmas.

Ingredients

  • 2 cups cream
  • 395g can sweetened condensed milk
  • 2 teaspoons vanilla extract
  • 200g fresh strawberries - finely chopped
  • 4 meringue nests (60g) - broken into small pieces

Method

  • Line a loaf pan with baking paper with the ends over-hanging for easy un-moulding.
  • Combine the cream, condensed milk and vanilla extract. Whip until soft peaks form.
  • Gently fold through the strawberries and meringue.
  • Tip the mixture into the prepared loaf pan. Place the pan into a plastic snap lock bag and freeze.
  • Take the semifreddo out of the freezer a few minutes before serving for ease of cutting.
