This is a great make ahead dessert for Christmas.
Ingredients
- 2 cups cream
- 395g can sweetened condensed milk
- 2 teaspoons vanilla extract
- 200g fresh strawberries - finely chopped
- 4 meringue nests (60g) - broken into small pieces
Method
- Line a loaf pan with baking paper with the ends over-hanging for easy un-moulding.
- Combine the cream, condensed milk and vanilla extract. Whip until soft peaks form.
- Gently fold through the strawberries and meringue.
- Tip the mixture into the prepared loaf pan. Place the pan into a plastic snap lock bag and freeze.
- Take the semifreddo out of the freezer a few minutes before serving for ease of cutting.
