Fig and Walnut Soda Bread

We like to serve this home-baked loaf with Honey Butter or cheese. If you don’t have buttermilk you can stir 2 tablespoons lemon juice or white vinegar into 2 cups milk and use that instead.

Ingredients
- 1½ cups flour, plus extra for sprinkling
- 1½ cups wholemeal flour
- ¾ cup walnuts – chopped
- ½ cup dried figs – diced
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups buttermilk
Honey Butter
- 75g butter – softened
- 2 tablespoons liquid honey
Method
- Preheat oven to 200°C bake setting.
- Line a loaf tin with baking paper.
- Whisk all the ingredients except the buttermilk in a large bowl.
- Make a well in the centre, pour in the buttermilk and mix to make a dough.
- Transfer the dough to the prepared tin and sprinkle the top with a little extra flour.
- Bake for 25–30 minutes. If it is browning too quickly, place a piece of foil over the top.
- Leave in the tin for 5 minutes before turning out. Leave to cool for at least 20 minutes before serving.
- To make the Honey Butter, mix the butter and honey in a small bowl.
- Serve cooled soda bread with Honey Butter.
