Fig and Walnut Soda Bread

We like to serve this home-baked loaf with Honey Butter or cheese. If you don’t have buttermilk you can stir 2 tablespoons lemon juice or white vinegar into 2 cups milk and use that instead.

Ingredients

  • 1½ cups flour, plus extra for sprinkling
  • 1½ cups wholemeal flour
  • ¾ cup walnuts – chopped
  • ½ cup dried figs – diced
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups buttermilk

Honey Butter

  • 75g butter – softened
  • 2 tablespoons liquid honey

Method

  • Preheat oven to 200°C bake setting.
  • Line a loaf tin with baking paper.
  • Whisk all the ingredients except the buttermilk in a large bowl.
  • Make a well in the centre, pour in the buttermilk and mix to make a dough.
  • Transfer the dough to the prepared tin and sprinkle the top with a little extra flour.
  • Bake for 25–30 minutes. If it is browning too quickly, place a piece of foil over the top.
  • Leave in the tin for 5 minutes before turning out. Leave to cool for at least 20 minutes before serving.
  • To make the Honey Butter, mix the butter and honey in a small bowl.
  • Serve cooled soda bread with Honey Butter.
