This classic fish dish is easy enough for a family meal but fancy enough for a dinner party. Look for thick fillets of the freshest fish you can find.

Ingredients

For the fish

  • 4 fillets skinless, boneless white fish
  • Salt and ground black pepper, to taste
  • 1 tablespoon butter
  • 1 tablespoon olive oil

For the creamed spinach

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • ½ red capsicum — thinly sliced
  • 2 cloves garlic — crushed
  • 250g baby spinach
  • Salt and ground black pepper, to taste
  • 50g cream cheese — softened
  • ¼ cup cream
  • 3 tablespoons finely grated parmesan

Method

For the fish florentine

  • To make the Creamed Spinach, heat the butter and oil in a large pan over a medium heat. Add the capsicum and garlic and cook for about 3 minutes.
  • Add the spinach and season to taste.
  • Whisk the cream cheese, cream and parmesan in a small bowl. Add to the pan and mix well until the cream cheese is melted and the spinach is creamy.
  • Season the fish on both sides. Heat the butter and oil in a large pan over a medium heat and fry the fish until golden brown.
  • To serve, divide the Creamed Spinach between 4 plates and top each with a piece of fish.
