This classic fish dish is easy enough for a family meal but fancy enough for a dinner party. Look for thick fillets of the freshest fish you can find.

Ingredients
For the fish
- 4 fillets skinless, boneless white fish
- Salt and ground black pepper, to taste
- 1 tablespoon butter
- 1 tablespoon olive oil
For the creamed spinach
- 1 tablespoon butter
- 1 tablespoon olive oil
- ½ red capsicum — thinly sliced
- 2 cloves garlic — crushed
- 250g baby spinach
- Salt and ground black pepper, to taste
- 50g cream cheese — softened
- ¼ cup cream
- 3 tablespoons finely grated parmesan
Method
For the fish florentine
- To make the Creamed Spinach, heat the butter and oil in a large pan over a medium heat. Add the capsicum and garlic and cook for about 3 minutes.
- Add the spinach and season to taste.
- Whisk the cream cheese, cream and parmesan in a small bowl. Add to the pan and mix well until the cream cheese is melted and the spinach is creamy.
- Season the fish on both sides. Heat the butter and oil in a large pan over a medium heat and fry the fish until golden brown.
- To serve, divide the Creamed Spinach between 4 plates and top each with a piece of fish.
