FRESH STRAWBERRY AND ALMOND CAKE

One of our favourite cakes to go with coffee or for dessert served with a dollop of cream.

Ingredients

  • 115g butter – softened
  • 3 tablespoons canola oil
  • 2 eggs
  • 1 cup sugar
  • Zest of 1 orange
  • 1 teaspoon each: almond extract, vanilla extract
  • 1 ½ cups flour
  • ½ cup ground almonds
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • 1 ½ cups fresh strawberries – sliced
  • ½ cup slivered almonds

Method

  • Preheat oven to 180oC (160oC fan bake). Line a 20cm round cake tin with baking paper.
  • Cream together the butter, oil, eggs and sugar.
  • Beat in the orange zest, almond and vanilla extract.3w
  • Add the flour, ground almonds, baking powder and salt to the mixture and mix well.
  • Fold in the strawberry slices and tip the mixture into the prepared cake tin.
  • Top the cake with slivered almonds.
  • Bake for 40 – 50 minutes or until a skewer comes out clean.
