Fresh strawberry sundaes

It’s hard to beat a fresh strawberry sauce over vanilla ice cream. These sundaes are a lovely end to summer meal.



For the fresh strawberry sundaes

  • Vanilla ice cream
  • Fresh strawberries
  • Chopped brownie, chocolate, marshmallows or nuts, to garnish

For the strawberry sauce

  • 500g strawberries – hulled
  • ¼ cup caster sugar
  • ½ teaspoon salt
  • ½ cup corn syrup
  • 1 tablespoon lemon juice

For the fresh strawberry sundaes

  • To make the Strawberry Sauce, blitz the strawberries, sugar and salt in a food processor until smooth.
  • Transfer to a medium saucepan and stir in the corn syrup and lemon juice.
  • Simmer over a very low heat for about 25 minutes until very thick and reduced by a third. Stir frequently to prevent catching on the base of the saucepan. Cover and refrigerate until needed.
  • To serve, scoop ice cream into serving glasses or bowls. Top with the strawberry sauce and fresh strawberries.
  • Decorate with brownie or other toppings of your choice and serve immediately.
