It’s hard to beat a fresh strawberry sauce over vanilla ice cream. These sundaes are a lovely end to summer meal.
Ingredients
For the fresh strawberry sundaes
- Vanilla ice cream
- Fresh strawberries
- Chopped brownie, chocolate, marshmallows or nuts, to garnish
For the strawberry sauce
- 500g strawberries – hulled
- ¼ cup caster sugar
- ½ teaspoon salt
- ½ cup corn syrup
- 1 tablespoon lemon juice

Method
For the fresh strawberry sundaes
- To make the Strawberry Sauce, blitz the strawberries, sugar and salt in a food processor until smooth.
- Transfer to a medium saucepan and stir in the corn syrup and lemon juice.
- Simmer over a very low heat for about 25 minutes until very thick and reduced by a third. Stir frequently to prevent catching on the base of the saucepan. Cover and refrigerate until needed.
- To serve, scoop ice cream into serving glasses or bowls. Top with the strawberry sauce and fresh strawberries.
- Decorate with brownie or other toppings of your choice and serve immediately.
