Ingredients

  • Firm, fresh herbs of your choice
  • Extra virgin olive oil or unsalted butter — melted

Method

For the frozen herbs in oil or butter

  • Chop the herbs finely or leave them in larger sprigs or leaves.
  • Pack them into ice cube trays to about two-thirds full.
  • Pour the oil or melted butter over the top.
  • Cover lightly with plastic wrap and freeze overnight.
  • Remove the frozen cubes from the trays and store in snap-lock bags labelled with the type of herbs and whether they are frozen in oil or butter.
