Ingredients

For the garlic & chilli olive oil

  • 2 cups extra virgin olive oil
  • 6 cloves garlic — peeled
  • 1½ teaspoons chilli flakes

Method

For the garlic & chilli olive oil

  • Warm the oil, garlic and chilli flakes in a saucepan over a low heat for 8–10 minutes or until the garlic is lightly brown. Leave to cool.
  • Remove the garlic from the oil and cut it into slices. Place in a bottle.
  • Pour the oil and chilli flakes into the bottle. Seal and refrigerate.
