The subtle flavour of this side dish makes it the perfect supporting act for fish and chicken.
Ingredients
For the garlic & turmeric rice
- 2 tablespoons butter or coconut oil
- 1 large onion — finely diced
- 4 cloves garlic — crushed
- 1 teaspoon ground turmeric
- 2 cups basmati rice — rinsed
- 5 cups vegetable or chicken stock
- 1 teaspoon salt
- 1⁄2 teaspoon ground black pepper
- Slivered almonds and fresh herbs, to garnish (optional)
Method
For the garlic & turmeric rice
- Heat the butter or coconut oil in a large saucepan. Add the onion and garlic and sauté for about 2 minutes.
- Add the turmeric and stir well.
- Add the rice and stir to coat evenly with the onion mixture.
- Add the stock, salt and pepper and stir to combine.
- Bring to the boil. Reduce the heat, cover and simmer for 15 minutes.
- Remove from heat and set aside for at least 5 minutes before fluffing the rice with a fork.
- Serve garnished with almonds and herbs, if desired.
