The subtle flavour of this side dish makes it the perfect supporting act for fish and chicken. 



For the garlic & turmeric rice

  • 2 tablespoons butter or coconut oil
  • 1 large onion — finely diced
  • 4 cloves garlic — crushed
  • 1 teaspoon ground turmeric
  • 2 cups basmati rice — rinsed
  • 5 cups vegetable or chicken stock
  • 1 teaspoon salt
  • 1⁄2 teaspoon ground black pepper
  • Slivered almonds and fresh herbs, to garnish (optional)


For the garlic & turmeric rice

  • Heat the butter or coconut oil in a large saucepan. Add the onion and garlic and sauté for about 2 minutes.
  • Add the turmeric and stir well.
  • Add the rice and stir to coat evenly with the onion mixture.
  • Add the stock, salt and pepper and stir to combine.
  • Bring to the boil. Reduce the heat, cover and simmer for 15 minutes.
  • Remove from heat and set aside for at least 5 minutes before fluffing the rice with a fork.
  • Serve garnished with almonds and herbs, if desired.
