These onion skewers make a novel addition to a barbeque.
Ingredients
For the glazed onion skewers
- 4 large onions
- 2 tablespoons tomato sauce
- 1½ tablespoons honey
- 1 tablespoon dijon mustard
- 1½ teaspoons balsamic vinegar
- 1 teaspoon finely chopped fresh rosemary
- Cooking oil, for brushing
Method
For the glazed onion skewers
- Soak 4 bamboo or wood skewers in water for 30 minutes.
- Peel the onions and cut them across wise into 1.5cm thick slices.
- To make the glaze, whisk the tomato sauce, honey, mustard, vinegar and rosemary in a small bowl.
- Carefully insert the skewers through 3 slices of onion per skewer.
- Brush with a little oil then brush with the glaze.
- Heat a pan or barbeque grill over a low heat. Cook the skewers, turning a few times and brushing with the glaze from time to time, for 15–20 minutes until golden and cooked through.
