Lamb and mint with the added zing of some Greek flavours make for a very nice meal.
Ingredients
- 800g lamb cutlets – single or double
- Drizzle of olive oil
Spice Mix
- 1 tablespoon dried oregano
- 2 teaspoons dried basil
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon dried dill
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- ¼ teaspoon nutmeg
Garlic and Mint Sauce
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 2 tablespoons fresh mint – chopped
- 3 cloves garlic – crushed
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- ½ teaspoon chilli flakes
Method
- Combine all the spice mix ingredients together.
- Coat each lamb cutlet in the spice mix.
- Whisk all the garlic and mint sauce ingredients together – set aside.
- Heat a large frying pan over a medium/high heat.
- Drizzle the lamb cutlets with a little olive oil and pan fry them until the lamb is cooked to your liking.
- Serve the lamb cutlets with the garlic and mint sauce.
