Greek Lamb with Garlic Mint Sauce

Lamb and mint with the added zing of some Greek flavours make for a very nice meal.

Ingredients

  • 800g lamb cutlets – single or double
  • Drizzle of olive oil

Spice Mix

  • 1 tablespoon dried oregano
  • 2 teaspoons dried basil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon dried dill
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • ¼ teaspoon nutmeg

Garlic and Mint Sauce

  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons fresh mint – chopped
  • 3 cloves garlic – crushed
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • ½ teaspoon chilli flakes

Method

  • Combine all the spice mix ingredients together.
  • Coat each lamb cutlet in the spice mix.
  • Whisk all the garlic and mint sauce ingredients together – set aside.
  • Heat a large frying pan over a medium/high heat.
  • Drizzle the lamb cutlets with a little olive oil and pan fry them until the lamb is cooked to your liking.
  • Serve the lamb cutlets with the garlic and mint sauce.
