This is very nice served with a multitude of different salads.
Ingredients
- 800g chicken thighs – boneless
- 1 tablespoon cooking oil
Marinade
- 1 cup plain Greek yoghurt
- 4 cloves garlic – crushed
- 2 lemons – zest and juice
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons honey
- 1 tablespoon dried oregano
- 1 teaspoon garlic salt
- Freshly ground black pepper
Method
- Whisk all the marinade ingredients together. Place into a snap lock bag.
- Add in the chicken and marinate for 4 hours or overnight in the refrigerator.
- Heat the oil in a large frying pan, over a medium/high heat.
- Brown the chicken on both sides until cooked through.
