Greek Chicken Marinade

This is very nice served with a multitude of different salads.

Ingredients

  • 800g chicken thighs – boneless
  • 1 tablespoon cooking oil

Marinade

  • 1 cup plain Greek yoghurt
  • 4 cloves garlic – crushed
  • 2 lemons – zest and juice
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons honey
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic salt
  • Freshly ground black pepper

Method

  • Whisk all the marinade ingredients together. Place into a snap lock bag.
  • Add in the chicken and marinate for 4 hours or overnight in the refrigerator.
  • Heat the oil in a large frying pan, over a medium/high heat.
  • Brown the chicken on both sides until cooked through.
