Ingredients
For the greek peasant salad
- 1 large red onion — thinly sliced
- 1⁄2 cup olive oil
- 1⁄4 cup red wine vinegar
- 5 tomatoes — cut into 1.5cm pieces
- 1⁄2 cucumber — cut into 1.5cm pieces
- 1⁄2 cup chopped fresh mint
- 1⁄2 cup chopped fresh basil
- 1⁄2 cup pitted kalamata olives — halved
- Salt and ground black pepper, to taste
- 100g feta — cut into chunks
Method
For the greek peasant salad
- Combine the onion, oil and vinegar in a bowl.
- In a separate bowl, combine the tomatoes, cucumber, mint, basil and olives.
- Add the onion mixture and season with salt and pepper.
- Top with the feta to serve.
