Leave this chutney for at least a week to develop its full flavour


For the green tomato chutney

  • 1.3kg unripe tomatoes — chopped
  • 2 onions — chopped
  • 2 granny smith apples — peeled, cored and chopped
  • 2¼ cups malt vinegar
  • 1 cup raw sugar
  • 2 teaspoons garlic salt
  • 2 tablespoons mixed spice


For the green tomato chutney

  • Place the green tomatoes in a large saucepan with the onions, apples, vinegar, sugar and garlic salt.
  • Tie the mixed spice in a small piece of muslin to enclose it. Add it to the saucepan.
  • Bring to the boil, then reduce the heat and simmer, uncovered, for 50–60 minutes, stirring occasionally, until there is very little liquid left. Remove the spice bag.
  • Spoon into hot sterilised jars and seal immediately. Keep in the refrigerator once opened.
