Start preparing these sticky Asian ribs a couple of days in advance so they have time to marinate well.

Ingredients

For the hoisin pork ribs

  • 1.5kg pork ribs — cut into serving pieces
  • 1 cup hoisin sauce
  • 4 cloves garlic — crushed
  • ½ cup honey
  • ¼ cup apple cider vinegar
  • ¼ cup soy sauce
  • 3 tablespoons olive oil
  • 2 teaspoons five spice powder
  • 1 teaspoon baking powder
  • 1 teaspoon ground black pepper

Method

For the hoisin pork ribs

  • To marinate the ribs, combine all the ingredients except the ribs in a large shallow dish or snap-lock bag.
  • Add the ribs and turn to coat in the marinade. Marinate in the refrigerator for 48 hours.
  • Preheat the oven to 150°C (130°C fan bake). Part-fill a roasting dish with water and put a wire rack on top.
  • Lift the ribs out of the marinade and arrange them in a single layer on the rack.
  • Transfer the marinade to a saucepan and boil until thickened.
  • Cook the ribs for 2½ hours, basting occasionally with the thickened marinade.
