I love making my own liqueurs – somehow they always taste that bit more special, and they make great gifts.
Ingredients
For the home-made coffee liqueur
- 2½ cups strong hot coffee
- 4 cups sugar
- 2¼ cups rum
- ½ vanilla bean — halved lengthwise
Method
For the home-made coffee liqueur
- Place the coffee and sugar in a jug or bowl and stir until the sugar is dissolved. Leave to cool.
- Add the rum and vanilla bean and stir well.
- Cover and leave to sit for 2–3 weeks in a cool place.
- Strain to remove the vanilla bean, then pour into bottles.
